Carrot Cake Oatmeal
Serves 1
Ingredients
- ½ cup oats
- 1 tbsp chia seeds
- 2 tbsp crushed walnuts
- ½ carrot, grated
- ½ apple, cored and grated
- Pinch cinnamon
- Pinch nutmeg
- 2 tsp sultanas, chopped
- ⅓ cup almond milk
Method
- Mix all ingredients together and transfer to a bowl or mason jar.
- Refrigerate for 2 hours, or overnight.
- Serve by itself or top with some coconut yoghurt.
