Cauliflower Rice Buddha Bowl

Ingredients
- ¼ cauliflower, cut into florets
- 4 tbsp sesame seeds
- ½ tsp turmeric (optional)
- ½ tsp paprika (optional)
- 2 tbsp olive oil
- ½ red radish, sliced
- ½ cup chickpeas
- 2 eggs, boiled
- 4 tbsp chia seeds
- 1 avocado, sliced
- 1 cup leaves/sprouts, sliced
- 8 cherry tomatoes
- 1 lemon
- Salt and pepper to taste
Method
- Place cauliflower, sesame seeds, turmeric and paprika in a food processor and blitz until it resembles rice.
- Arrange the vegetables between two bowls, drizzle with olive oil and a squeeze of lemon and sprinkle chia seeds on top.
