Banana Breakfast Cookies

Makes 10-12

Ingredients

  • 1 ripe banana, mashed
  • ¼ cup sultanas or dates, diced
  • ½ cup rolled oats
  • ¼ cup ground flax seed
  • ¼ cup almonds, chopped
  • ½ tsp cinnamon
  • 1 egg, beaten
  • 3 tbsp Ultimate Superfood powder

Method

  1. Preheat oven to 160ºC and line a baking tray.
  2. Mix all ingredients together until well combined.
  3. Scoop heaped 1 tbsp. of mixture and spoon onto tray, about 2cm apart. Flatten slightly.
  4. Place tray in the oven and make for 15 minutes, or until golden brown.
  5. Allow to cool.
