Cauliflower Rice Buddha Bowl

Ingredients

  • ¼ cauliflower, cut into florets
  • 4 tbsp sesame seeds
  • ½ tsp turmeric (optional)
  • ½ tsp paprika (optional)
  • 2 tbsp olive oil
  • ½ red radish, sliced
  • ½ cup chickpeas
  • 2 eggs, boiled
  • 4 tbsp chia seeds
  • 1 avocado, sliced
  • 1 cup leaves/sprouts, sliced
  • 8 cherry tomatoes
  • 1 lemon
  • Salt and pepper to taste

Method

  1. Place cauliflower, sesame seeds, turmeric and paprika in a food processor and blitz until it resembles rice.
  2. Arrange the vegetables between two bowls, drizzle with olive oil and a squeeze of lemon and sprinkle chia seeds on top.
