Eggs On Sweet Potato Toast

Ingredients
- 1 large sweet potato
- 2 eggs
- Fresh herbs of choice
Method
- Cut the sweet potato lengthwise into ½ centimetre slices.
- Place in the toaster and cook for about 5 minutes, or until browned and softened.
- Sprinkle with some fresh herbs and serve with eggs of choice.
