Raspberry Coconut Bread

Ingredients

  • 3 eggs
  • 4 dates, soaked, pitted and chopped
  • ¼ cup coconut oil
  • ½ cup raspberries
  • Pinch sea salt
  • ¼ cup coconut flour
  • ¼ cup ground flaxseed
  • 1 tsp. baking powder
  • Topping: nut butter

Method

  1. Preheat oven to 180ºC and line a small loaf or slice tin.
  2. Combine ingredients together to form a batter and transfer into loaf tin.
  3. Bake in the oven for about 25 minutes, or until cooked through.
  4. Serve with some nut butter.
