Zesty Prawn Salad

Ingredients
- 80g Australian prawns, cooked
- 2 spring onions, chopped
- 1 cup rocket
- ½ mango (optional)
- ½ tomato, quartered
- ½ cup fresh mint, chopped
- ½ avocado
- 2 tbsp olive oil
- 1 tsp wholegrain mustard
- ½ lime, juiced
- Pinch cracked pepper
Method
- Mix the oil, mustard, lime juice and cracked pepper together to make the dressing.
- In a bowl, toss the salad ingredients and prawns together.
- Drizzle dressing over salad and enjoy.
