Zucchini Breakfast Muffins

Ingredients
- 2 zucchinis, grated
- 1 small sweet potato, grated
- 6 eggs
- ¼ cup parsley, chopped
- ½ cup cheese, grated
- ½ cup cashews, chopped
- Pinch sea salt
- ¼ cup water
- ¼ cup ground flaxseed
Method
- Preheat oven to 180ºC and grease a muffin tin.
- Whisk the eggs and water together, then mix through the remaining ingredients until well combined.
- Pour mixture evenly between muffin cups and place tray in the oven.
- Bake for 25-30 minutes or until cooked through.
